hello all on the forum! im woody from brother's drake fine mead in columbus, ohio. we're a new startup meadery here and i found out about the forum at the international mead festival in boulder. it was a blast! anyone who wants a crash-course in mead, go there. ive attended all but one, and you cant help but leave an expert in commercial mead. so much is represented. id recommend staying closeby or in the hotel though. you will be very drunk by the end of the night! the commraderie is wonderful! i cant say enough good things and now i feel like im gushing, but, seriously, its worth every penny and every hangover.
anyway i have a question: i, as a professional, am very interested in ageing meads and knowing which ones you all have aged very well and especially poorly. you guys have a huge amount of vital knowledge to our flegling industry. so.. what do you know?
thanks, woody

Woody,

Welcome to the forums! It's always great to see a pro mazer on the boards!

The topic of aging has been a popular one here in the past. A quick search, using the Search button on the left above, between the "HELP" and "PROFILE" buttons, yielded the following:

Also, you might want to read the following, which is about wine barrels, oak, and oxygen, all of which have great impact on aging :

Woody I had a chance to try some of your mead at the International Mead Festival. If I recall, one traditional mead of yours I tasted was bottled in 1998. It seems to me you already have a pretty good handle on ageing!
