Is this an accepted practice? I racked my mead last night and added 1/2 gallon of maple syrup to 4.5 gallon (total 5 gallons) Working out my gravities, etc I think the mead might be a bit too dry. The gravity last night was 0.997 (OG 20 Brix - approx. 1 gallon honey in 3.5 gallons water) with the maple syrup added and the tolerance level of the 71B I'm using I think it might be a bit too dry.
Can I add a lb of honey to a little water and add it to my fermentors at this point? Or should I wait and back-sweeten when it's all over?
