View Full Version : Do ya'll add acid to your show mead?

Wondering if any of ya'll add acid to your show meads, either before or after fermentation. Several sources I've read show no acid & a couple sources say to add it after fermentation. This will be a dry mead - planning on aging for ~10 years. Your thoughts?


Here's my recipe.

~20 lbs honey or enough to make 15% PA
~4 gallons water to make 6 gallons (actually came out to be ~6.5gallons)
2 teaspoons yeast energizer
2 teaspoons yeast nutrient
Premier Cuvee yeast
2 tablespoons Liquid tannin
Lots of aeration in initial must

OK, now having done a search, like I should have done initially. :-0

Seems that the consensus is to add acid blend after fermentation, to taste. May or may not need any. Since this will be a long ager, I think a bit of acid will help preserve it & also the acidity will mellow with time. Just started this batch last night, so we'll just have to wait & see.
