So, I bought a new barrel from Mexico before reading in the digest that it would be more trouble that way. It's done, so I guess I'm going to use it.

I'm making a sweet mead as my intro to mead. I started fermentation in May. I've transferred between carboys several times. I want to drink the mead around Christmas.

So when, and how, do I use the barrel?

I have more questions, but I'll try to post them in separate threads.

You may get some better answers if you can provide a bit more detail. What kind of barrel is it? Type of oak? Toast level? size?

Also, what kind of mead is this? An outline of the recipe will help. Type of honey? ABV? Gravity? Age?

This kind of information will be helpful.
