    Hello all
    First thank s to every one for all the imfo! I have been reading for a while and am on my second gallon batch first batch found some where on the net was :
    3# honey
    bread yeast -yea I know but i had not found this site yet
    Teaspoon lemon juice
    cup of strong black tea
    This was made 5 month ago it is drinkable. I finally found some store bought mead to compare it to this week, oliver winery camelot mead my home made is heavier but similar taste
    second batch cycer
    Pateurized apple juice
    1# buckwheat honey
    2# clover honey
    red star champagne yeast
    1 tsp id carlson yeast nutrient
    racked after 1 month and again yesterday after 2 months
    took a sip after racking and it is good!
    I would like to make something similar to the camelot mead and need a recipe
    Also what would be a good yeast to keep around for general use ? I like semi sweet most of the time
