It has finally been three months since I made my first batch of mead. I made a gallon of Ancient Orange Mead and its been in the basement for the past three months. Now I might not drink it yet but I would like to siphon it and bottle it. If I wanted to let it age a little bit more would it be ok to do it in the bottles or would it be better to let it age a little longer in the carboy? When do you guys feel it reaches its best tasting, after how many months. I plan to make much more and try a bunch of recipes especially since this summer we are getting a hive of bees. Thanks

Personally, in my limited mead-making experience, provided that it has dropped clear, I would rack it off into another sanitized 1 gallon jug, and let it bulk-age at least 6 months. I know that JAO is a 'no-age' mead, but believe me, it still gets better with age. YMMV.

Ok sounds good. I have heard from many people that JAO does get way better with age so I will rack it and then let it sit for as long as I can ;D.
