    Default God, I LOVE father's Day

    My brewing partner just got home from Tasmania with this load, and my dear wife got home from night shift and made me this.

    There's leatherwood, blackberry, 'Tassie meadow' (which I think is an off season natural blend like wildflower)
    I simply can't wait, the blackberry is gorgeous!

    Now... What to do with 45kgs (90 lbs) if honey?
    We have a 60litre (16 gal) primary bucket we're yet to christen.
    The majority of honey acquired was leatherwood, a VERY bold and dark honey that really lets you know it's unusual. So we'd be working with this for the monster fermenter.
    Any suggestions?

    There was another thread recently about Australian honey's in general, but I didn't read it very well as I can't get a hold of out of country varietals very well yet (soon, soon one of these applications I'm putting out will work out and I'll have enough monies to truly indulge in my addiction)
