...just racked, that I made 1-31-12.
Here is the recipe(that I got from Will/stormthecastle.com):

3# Leighton's Orange Blossom honey(got it at Publix-heated up to 140F for ~20 minutes)
one seedless navel orange with rinds
~ 30 raisins
5g Lalvin D-47 dry yeast(rehadrated @ room temp)
Spring water to one gallon.

...and it smelled and tastes great already!! Going to let it age for 30 days and taste it again, if I like it at that point, will bottle it!

I only ended up with a tad over 3/4 gallon so have alot of head space, and don't want to add anything to it so hopefully that won't oxidize it any.
