I just recently started brewing my own mead at home. This year, my father made a batch and it was relatively good, so I decided to try my hand at it. I only wanted to do a 1 gallon batch, and i had heard you wanted about 3 pounds of honey per gallon. Easy enough. I also heard that you could simply use Fleischman's yeast, so I bought a few packets from my local Walmart. Okay. Made my must. Added the yeast, and then I thought "Ah, why not add something to give it some flavor..?" So I read up and found Joe's recipe for using oranges and raisins. I regretfully didn't have any oranges, but I did have raisins and thought what the heck..? So i added 25 per the instructions. It was only at this time that I noticed the recipe said to only use a teaspoon of yeast. I added a whole 7 gram pack. Plus the raisins. How screwed am I...? I also noticed the recipe said about 2 and something pounds of honey and not 3, so i thought "Ahh....maybe the extra yeast will eat the extra honey or something?" Help. I don't want it to explode during fermentation. I have it in a closet in the dark, and i reaally wouldn't want to ruin the carpet in there.
