  1. Default Blackberry Puree in Secondary - Headspace/Oxidation Risk Concern?

    Hey guys. Have a 1 gallon melomel going that has been fermenting in a 2 gallon bucket. Primary is complete.

    I wasn't concerned with oxidation from the extra headspace in the primary, but now I want to rack to a secondary and add 1.5lbs of Blackberry puree.

    Is it OK to rack to a 2 gallon bucket, even though I'll have 3-4 inches of headspace at the top? How long will it take for fermentation to kick off again to fill that headspace with Co2? Better ideas? Thanks for the help.

    Not sure why you would want to rack it. Do you have SG readings? You can probably just add the puree.
