I plan to use mesh bags when using fruit, take more gravity readings ( when not using fruit ), try using some clearing agents or than time and cold crashing, and to continue to read about mead making as much as possible... :)

Make more OB traditional with conventional yeast.

Make a cyser.

Finish the time lapse project.

I have yet to make anything with OB save for one where I backsweetened with it. For the price (and conversely, the quality) of OB in the grocery store, I'll have to bite the bullet and spend some real money and order online or something.

Cuts... yes they are used in knowing when the "foreshots" are done and when the "heads and tails" are done.

To quit starting and then neglecting beer and hydromel batches!
To get all those bottles I took out of the racks in July back into the racks before next July...
To actually use some of the fruit in the winery freezer instead of just using the freezer as a racking elevation. I sense another multifruit mel coming on... maybe a 5 gal batch done in two fermentation buckets this time.
To cross SOMETHING off my to-brew list this year without replacing it with three other things I want to do!
Oh, and use the OB, mesquite and wildflower honeys I have been given...

1. To make at least two buckets of stock honey worth of mead (and not buy any more until I double that!)
2. Use the 20 lbs. of mango in the freezer
3. Use the 20 lbs. of blueberries in the freezer
4. Make a 14 gal pymenet out of the remaining wine kit in the cooler
5. Try my hand at braggots
6. Keep a mead on one of the two taps of the kegerator
7. Use the flip top bottles I have or find a home for them
8. Separately cool the wine rack area, turn its closet into a primary fermentation station
