    Hey guys,

    I have a 5 gallon batch of JAOM going right now and am not sure how long a majority of the yeast activity is supposed to go for. It was bubbling at about one bubble every 2 seconds for the first two weeks, slowed to one every 6-8 seconds the third week, I'm into my 4th week now and it's one every 20+ seconds. My guess is that it's just running it's natural course but I want to make sure it isn't stalling out too early. Is this about the right timeline for the activity to start slowing down? Thanks!

    Hey Bob,

    I'd recommend getting a hydrometer to measure your mead. That's really the only way to tell where your fermentation is at. The bubbles you see now could just be the mead releasing gasses that have built up in it and might not be indicative of fermentation. It's certainly possible your fermentation is taking that long. Or it possible that you stalled. Or you could be done and its just releasing gas. Only way to know for sure is the hydrometer.

    Having only done one JAOM myself, it does sound about right. I would let it sit for another 4 to 5 weeks, while the fruit falls and it clears (the fruit in mine didn't all fall, but it did clear nicely). Then I would bottle it.

    Did you follow the recipe including multiplying all the ingredients by 5 since it is a 5 Allen batch?

    Basically. I did two packets of yeast and 5X the oranges and spices. I added honey and water to about 5.5 gallons since I'm using a 6 gallon carboy.

    I'm going to take a hydrometer reading later today just to be sure, but it sounds like I don't have too much to worry about at this point. Thanks for your input!

    I've only made one JAOM and it was August-September here in CT so summer temperatures. The fruit fell after 65 days and I racked to secondary at 75 days.
