    Anyone ever do a lemon mead? Kind of like a hard lemonade, or do you suppose it would taste odd? The idea of honey and kemon makes me think of cough syrup, but I wouldn't mind brewing up a hard lemonade.

    Lemon mead (very sweet) is my staple mead. I use it as a sipping refresher on hot days (and cold as well ).

    For 5 gal
    • 5 lemons - A lemon per gallon (juice plus zest)
    • D-47 or a 12-14% yeast
    • 15lb honey

    Add tannin powder if you want a slight wine-like tannic addition, or 1 cup of tea (no milk) for a slight harshness.

    Note:
    • ginger also complements lemon, so you can add a little grated ginger (1 tspn), but then it isn't a lemon mead is it
    • For more honey flavour reduce the lemon
    • for heaps more lemon, soak some more zest while its clarifying (post fermentation)


    To make it more a lemonade, you probably want it carbonated - which I have never done.
