Hi all,
can someone point me in the direction of a higher alcohol tolerating yeast?

Thanks

Lalvin EC-1118 (Champagne Yeast) is the most common.

Someone mentioned Turbo Yeast, but that's normally for doing distilling batches (where the flavour isn't as important). IIRC, I think the turbo yeast is something like EC-1118 prepared with Fermaid or nutrient to make it more resilient)

I've used EC-1118 and it is definately quite aggresive. White labs also produces a High Gravity Ale yeast which supposedly can ferment up to 25%...but i've never actually used it.

Another which is the same strain as the Lalvin EC-1118 is the Red Star Premier Cuvee.

I think I'm going to go with Lalvin EC-1118, Ive asked around and it seems to be popular.

Thanks a bunch.
