Thread: Buckwheat Honey

    Hi All,

    I note that many of the recipes call for buckwheat honey - down here in Australia it does not exist.

    Does anyone understand what this might equate too in Australia


    Can anyone describe the honey so I can try and find an appropriate substitute.

    Buckwheat is dark with lots of nutrient in it - it is a natural form of nutrient for the yeast.

    Maybe IronBark or a dark honey may(?) have nutrient in it. See if you can find info that might point to a honey having a higher nitrogen content.

    You could try a handful of raisins per 3L as per Joe's Ancient Orange & Clove recipe to provide nutrient, or just use something from the brew shop (DAP or Fermaid).

    G’day James,

    I have steered clear of any honey with eucalyptus in it as I am afraid of what tastes may surface.

    The honey varieties (- eucalyptus) that I have ready access to are;
    orange blossom,
    clover, and

    They are all light(ish) and I'm not sure about nutrient levels.

    I did search around and found some discussion in the Mead Lover's Digest #870, 21 September 2001 that suggested that eucalyptus derived honey could impart a bitter/nasty taste and should be avoided. . . .

    I'll keep searching and see what dark flavoursome and nutritious honeys I can find.
