Default JAOM, fruit beginning to spoil?

made 2 6gal carboys of JAOM. bottled about 65days ago.

must not have topped up the carboys enough, as the orange slices are not covered by mead and are starting to give off a whitish colored tinge into the liquid.

do i simply rack this and filter, or is it ruined?

How does it smell?

Are you sure the whitish tinge isn't just dead yeast falling off the orange slices?

Robin,
If it’s a flakey looking white or grayish white substance don’t worry. I have seen this on fruit in mine occasionally too. The first time that I saw this I freaked out. Last time it happened I just kind of swirled it around and it all flaked off and in a day or two it settled into trub- no harm done.

it still smells like oranges. i topped it up with water and added some sorbate. i will rack and see what settles out.

If you mean the oranges are starting to look tattered and falling apart, it's pretty normal. Remember that alcohol is a great preservative and the environment inside the fermentation vessel will kick the !@##$% out of anything stupid enough to get into it...
