Default 33lbs of green coffee beans and my weight in honey

No, that isn't a recipe (Although, I should look at some coffee meads because it almost sounds possible). It is just what I purchased over the last 8 days. Even by my standards, that seems like a lot.

Well the honey will always be usable.....

Though from what I understand, you need to get the coffee beans roasted, or roasted in batches with different levels of roasting on each batch to give a variation/complexity of flavour before deciding whether you're gonna use brewed coffee for the flavour, or whether you're gonna try and just use the ground beans ? Or just drink the coffee while you're waiting for the honey to ferment after mixing it into a recipe of some sort
