One of the most exciting things that I have experienced in Mead/Hydromel making is that the color of the Mead changed as the honey has been converted to alcohol. I was unaware of this and was pleasantly surprised albeit nervous at first. I thought I had done something wrong at first, but a friend assured me that it was working out as it needed to.

So those of you who are NewBees I am here to tell you that the color will change, and it is ok. Enjoy the metamorphosis. It is part of the wonders of Mead making.
