Hi! question from a new mead maker:

I am 2 weeks into a 1 gallon batch of "no age sweet mead". I followed the directions exactly (i think).

It has been bubbling for the last two weeks and has slowed down to 1 bubble every 8 seconds.

I dont have a hydrometer, so I am wondering when I should rack it? should I wait for the bubbles to slow down or stop first, or should I just follow the time line given in the recipe and rack it now?
