I was wondering about the aging of mede. I know it is best to bulk age the mede but what exactly are the factors that determine how long you can let the mede age? Why can you keep one mede for years and others only for a few months?

My first two batches of mede are fermenting happily at the moment. Of these two batches I would like to drink some straight away and I would like some to age for a long time, maybe even years.
