How long did you age the JAO to achive this level of quality. I only ask as I have 6 one gallon batches and want to put some away for long term aging.

I went back & checked my fermentation log, and the only thing I did to stray from Joe's recipe was to add two handfulls of frozen strawberries and 2 handfulls of frozen blackberries from the grocery store freezer section.

This was started December 15th, 2009 and bottled February 19, 2010. So, it's only had less than 6 months to age!

The bad news is I started with 30 bottles, & I only have 10 left :(

Even a quick, bread yeast mead can be a “real” mead when done right.
