I'm currently brewing up my Holiday Cyser (see "Brewlog") and I noticed a strong sulphur smell. I knew that this is a product of 'stressed yeast' so I immediately added additional nutrients, checked the must temperature and the P.H. The P.H. is down around 2 and I want to bring it up to 3.5 - 4. There are 3.5 Gallons must total, and I have added 1/2 a gram of Potassium Carbonate to the must thus far. I'm waiting to see how much that brings up the P.H.
Should I add more? If so, how much?
