I started my 20 oz batch of mead yesterday(first batch ever) and today I noticed that the smell coming out of the balloon smells like the starter for amish friendship bread(sourdough bread that is baked sweet) and I was wondering if that is normal for the ingredients I used. The ingredient list and amounts is below.
Clover honey: 7.5 oz
Red Star Quick Rise Yeast: 1/2 packet(about 3 oz.)
Lemon Juice(from concentrate): 1 7/8 tsp
Lemon peel(dried): a tiny pinch
Raisins: 3
Water to fill
I just want to know if it's normal or if I messed up. I already messed up with the water being refrigerated so it took 4 hours for it to start bubbling and filling the balloon.

Welcome to GotMead?

The smell you notice is most likely just the smell of yeast fermenting. Baker's yeast like you are using produce lots of CO2 in comparision to some of the wine/mead yeasts but should work just fine.

As long as you sanitized everything, I think it will be ok.

If you haven't already, you should read the newbee guide to making mead.
