Greetings to all,

Simple History:

Wife likes wine and mead so I decided to make some for her. Did some research and found JAO's recipe on utube continued to research and found this site and forum. Read thru the newbee guide and figured what the hell, I'll try JAO and see what happens. I made a 1 gal batch and it turned out great but I noticed it took along time for the temp to drop to pitch the yeast.

Now I've made a 5 gal batch following the recipe as posted (with one exception: only 4 cloves) same problem as before, the temp won't drop in the glass carboy.

Finally, the question;
Will adding the yeast before the solution is at room temperature ( must is 78.1, room temp 73) adversly affect the process? If it is within several degrees (2 to 6) F, is it a close enough temperature to go ahead with the addition?
