So 5gallons of apple cider with 15lbs of honey fills up my 6 gallon carboy perfectly. Is that a 6 gallon batch or a 5 gallon batch?

The calc uses final size, so if your volume at pitch comes to 6gal the it's 6gal batch. Curious that 15lbs of honey fills the carboy. Are you filling to the top of the neck? That is actually more than 6gal on better bottles. Or you may have some very dense honey, honey is usually ~12lbs/gal.
