Soooo yeah...It's a 5 gal JAO, right now, the only thing I can think of it using the stopper with no airlock, so that the foam can still escape but the carboy whole is't open. Please tell me I'm not screwed, I've never had this happen before :(

It'll be fine. I generally clean out the airlock 2 or 3 times everytime I make a melomel. Always turns out fine!

what you did wrong (probably) is you filled the carboy past the shoulder.
I've never had a mead able to foam up on it's own.
Restrict the surface area though, and the bubbles multiply. THe number of bubbles per m² (or square foot, or board-feet, or acre or whatever silly units you choose) goes up by the square of the radius. which is a pretty steep curve.
If you fill past the shoulder, you get a lot more bubbles at the surface. as the neck narrows, the more build up you have, the faster it will build up until poof! your airlock is full, or worse yet blocked so you later have a MEA.
Try to give your primaries plenty of headroom
