When I poured my meads bottle to bottle there was a little rush of bubbles and a fizz on top that remained after capping the new bottles.
As this is my first competition I want to make sure and enter them correctly, so will they pour like that again or was that just result of a hard pour and/or any co2 dissipated after that? If I enter them as petillant and only get a few bubbles can I expect to lose some points?

I found they gig you more for declaring petillant when they see still, and not so much for seeing a little petillant when you declare still. It was only one contest and one mead, but it was NHC. Pour another for yourself the same way and you be the judge.
