Figured it deserved another thread, but don't kill me if it didn't. I'm new, don't shoot. ;)
Question: If I'm step-feeding, how in the world am I going to calculate ABV? I'd like to have a wild guess at a typical "Initial Gravity/Final Gravity" But I don't think that's how this is gonna go. Lol.
Also, if you'd like to answer something COMPLETELY off-topic, how do you keep germs out, while oxygenating mead?

Someone will likely have the official more correct answer soon. One way is to add your total volume of honey and your total volume of water(for a traditional) into the mead calculator. You will by then know your FG as well. Be sure to leave enough room for honey additions, you will be able to keep track more easily.
The second part is you don't. Wash your hands, use clean tools,wear clean clothes, wipe off the top and sides of fermentation vessel after opening. The initial process will be sanitary, then use a method that will give you a fast route to complete fermentation. At first your yeast will be the dominate organism and then alcohol will dominate.
