There's a sweet Riesling that I'd really like to model a batch of mead after, so I thought I'd buy a bottle and do some analysis. Besides gravity and pH, what other qualities can I measure in order to produce a similar brew? Alternatively, is there a better way to measure the sweetness besides using a hydrometer?
