I just got some blackberry juice and was considering of making a melomel. I was going to add the blackberry in the secondary.
Questions:
1) I have been using orange blossom so far. Would another honey be better?
2) any yeasts that you know of would work well with this combination? I am aiming for 10-12% I want to preserve both the blackberry and honey taste if possible.

QA23 is my favorite followed by 71-b and RC212. You might consider adding a little wildflower to you OB to help balance the tartness of the berries.
