I haven't tried a pepper mead yet, but I did make a jalapeno wine. It has a bit of fire in it. My brother mixes it with tomatoe juice to make bloody mary's. Says they're better that way than any other recipe.

Here's the recipe I used for 1 gallon.

~14 peppers (with seeds for fire)
15 oz of raisins
2 # of sugar
1/8 tsp tannin
1 ? tsp citric
pectin per size
Blended peppers until they were finely ground. Put in boiling water with sugar. Allowed to cool, added other ingredients. Added yeast starter. Racked when fermenting had slowed considerably and bottled about 4 monthes later.
