Here's one from "Brewing Mead: Wassail! in Mazers of Mead" by Lt. Col. Robert Gayre with Charlie Papazian.

"No one should ever use the excuse that mead takes too long to make. Time passes. And what better way is there to pass time than knowing that one's mead is slowly aging, mellowing, and maturing as he or she is?"

Another quote I've heard that can apply to mead making...

You've all heard the excuse... "I'm too old to start something new...or...that if I start something it will be three mo. (1 year or 3 years or whatever) when I'm finished.

Well... 3 months or 1 year or 3 years will come anyways... might as well start something new.... like a new batch... and let time pass productively.
