i was just wondering, what exactly are 'off flavors'? Does it mean unidentifiable, or unexpected flavors? Or is it more along the lines of undesirable flavors?

It usually means undesirable flavors. Most times this is created by yeast being stressed. Different situations (such as temperature, pH, chemical overdosing and light) can cause yeast to create esters that will have a strange flavor in your finished product.
