I don't have a whole lot of experience with Oak, but it seems like the pros deem it necessary, so i need to learn more about it.
I have a friend who made his own Oak concentrate and really likes this method. Does anyone have experience with this? I've read (and searched this forum) that some people think that this adds some harshness to the mead.
What is it about adding the oak directly to the mead that makes this more smooth?

It seems a bit of a gamble to Oak .. especially with Chips. I don't know what it tastes like to over oak, but i don't know now when to oak... and for how much.
