Total newbie here, this is my first post and man its a doozie. First off here is the recipe i used. 4 pounds of honey, 4 cartons of raspberries. 1 Lalvin ec-1118 packet, and filled the carboy with water up to about an inch below the neck of my 5 gallon carboy. I did not add any nutrients right off the bat. I realize now that I did not add enough honey initially. it is now about 11 days into fermentaion and my air lock has slowed considerably to about 1 bubble every 30 seconds. Like I said before I realize that I should have added 2 or 3 times the honey that I did. I added an energizer about 4 days into fermenting, which really got it bubeling nicely for about 4 days then I added a smaller amount to get it going again but nothing happened. I don't really know how to proceed, from everything I have heard it is was to early to rack but with hardly any action from the yeast and all the color gone from the fruit it seems like an option. I was also wondering if it would be a bad idea to add more yeast and honey and also rack it...... haha I am lost if you can't tell. Thank you so much for this forum and any wisdom shared. thanks
