I started a batch of medium show Mead today and the pH before I pitch the yeast was 6.2. It is a 5-gallon batch using 15 lb of Moreland Wildflower honey raw. I have read Ken book and he said optimum pH for fermentation is 3.7 to 4.6. I added 2 teaspoons of acid blend in my pH dropped to 4.2. My question is has anybody found raw honey to be higher in pH then honey that has been heated up to 190 degrees and filtered through the paper filters
