    OK, this is my first batch of mead. I'm hoping this is normal, I have no idea, but it's not really what I expected. I have particles floating on top. Let me back up and tell you where I am.

    Basically, I'm using meadowfoam honey, DV10, ferment dry at 14%. I racked from the fermenting bucket into a carboy at day 6. I roused lees for a while and then after letting settle a few days I racked off the gross lees at day 37, so almost 2.5 weeks ago.

    In addition to the stuff on top, on the bottom is, what I thought, was a thick 2 inch layer of milky white stuff. I thought I blew sanitation somewhere (maybe I did?). Upon close inspection with a flashlight, I see that the stuff on top is not a film or haze or foam, but is small white particles. Also, I'm pretty sure that the white particles on bottom are simply clinging to and coating the glass, as if they're attracted to it, and not a milky layer at all.

    Does this sound normal? I'm optimistic because it doesn't smell bad or anything. I guess I expected a nice clear top surface. Should I be worried?

    I'm guessing your fine. The fact that it smells ok is a good sign. You could taste it too you know.
    The white stuff is yeast that have settlwd
    7 out of 4 people have a hard time using their hydrometer!
