If you add an ounce of honey every few days, you can push 1388 to 19%. It will start to get hot from alcohol content if you do this. Oak can mellow it out as well as age.

Yeast won't even eat food above 9-10% ABV.
7 out of 4 people have a hard time using their hydrometer!

SG Ratings 1.010, 1.0, 1.010, 1.0, 1.0 prior to adding honey.
I kinda feel like I waited too long between readings, hopefully not so long the yeast went too inactive. Ill monitor more often and watch them all, but esp. the 2 that didn't go to 1.00.
Haven't worked with Oak chips before. What's the protocol - directions say soak in water, but should I soak in sanitizer instead? Or soak in water and sanitize the exterior just before putting in the must? Also do you still like medium french oak or have any other oak recommendation for now.
