I was wondering what is your opinion on what is the best fining agent for mead/wine/beer? Is there one universal fining agent that would work for all three?

Some of the particles you want to remove are positively charged; some are negatively charged; some produce a haze and are not in fact particulates , no one fining agent is universal.Each has it's own strength (and presumably , it's own weakness). Horses for courses.
