I came across this in my wanderings. This is an announcement by the Alcohol and Tobacco Tax and Trade Bureau (used to be the ATF). While it's aimed at commercial outfits, it looks like the serious home meadmaker could learn a few things. It's free, though seating is limited, so you'd need to make reservations.
