I just started a batch and put in my second serving of yeast (after 5 days) and noticed there is a larger build up (of something honey? Yeast? Idk) at the bottom of my jug than my first batch. Is this normal? Why did this happen?

I've never heard of putting in a "second serving of yeast". So, unless you had some honey (sugar) leftover, it's probably a combination of the spent yeast and the new yeast.
