I've scoraged the net looking for anything having to do with chokecherrys and beer. Chokecherrys are an abundance around my parts real soon and I would like to brew an ale or a stout using some chokecherrys for and event. Can anyone help me out here? Maybe get creative and get me a base recipe to work with. I've done a few beer batches and understand the fundamentals, and yes I will do a chokecherry mead too. So don't get all bent out of shape :)

Are you planning on doing all-grain or partial? You thinking of something light, fruity and refreshing? Or something stronger, deeper, more complex. I bet a Witbier would lend itself quite nicely to being fruited in the secondary if you're interested in the former. Also, consider when you'd like this to be ready. A heavy-duty fruity Barley Wine may take a bit longer before it hits its peak.

I highly recommend Randy Mosher's Radical Brewing to get yor creative juices flowing. I think he may have a chockcherry recipe. I'll check when I get home tonight.

Sorry for the delay. Looked over Radical Brewing again and he doesn't provide a chokcherry recipe, though he specifically mentions that their concentrated flavor, acidity and color mean they can be great for brewing beer and mead. For standard/sour cherries he recommends 1-4 lbs/gallon. Probably less for chokecherries.

Personally, I would try a Witbier recipe (with or without the spices) and add chokcherries to the secondary (maybe 2 lbs). The paleness of the base recipe ought to really let the beautiful color of the cherries shine through. And hell, I just enjoy a good Wit!

I picked about 10gal. of chokecherrys and froze them.
That ought to be plenty huh?
