Hey guys, I've had a keg of Irish Stout carbonating for a couple weeks now and was wondering if it would keep its level of carbonation if I took off the gas and kept it sealed?
 
It should hold the pressure, although it may leak slowly if one of the seals is old or not seated properly. You can check by leaving it alone for a week, then reconnecting the CO2 and listening to hear if there is an inrush of gas. If this happens, you have a slow leak. I have left the gas off a keg even with a slow leak, and have reconnected every now and then to repressurize as needed.
