Hello all. Opened another bottle of mead tonight, this one labeled as a Semi-Sweet mead. I'd call it a sweet mead, not semi-sweet because to my palate, it's easily as sweet, if not sweeter than the Sky River Sweet mead I tried the other night. It, too had a slight "off" taste like their Sierra Nectar Semi-Dry that I tried last night, only not near as strong, which was nice. However, the sweetness had an artificial, candy-like quality that I'm not a fan of.:sad10: (BTW, I don't eat candy and was never a big fan of Halloween.)

Overall, I'm sorry to say (mainly to the folks at Mountain Meadow), that I'm not a fan of Mountain Meadows Mead.


On the plus side, I'm becoming a bigger fan of my own brews;D! Glad I decided to upscale to 3 gallon batches this year. Getting impatient for next year so I can try my cyser, do a taste test to see if there's a difference between using my well water vs. store bought spring water, and hopefully things will thaw out soon here so my maple trees will resume giving me maple water (2 gallons collected so far) so I can start another 3 gal batch using that instead of plain water (sg of sample I collected was 1.012).
 
I recently made a pure maple traditional, no honey just maple syrup. I am going to let it age a year before I try it to see how it turns out. It fermented out to .993 but I've read that Acers can seem sweeter than they are. I have high hopes.
