Grandparents gave me a gallon of mixed grape and plum juice from fruit they picked. They wanted to make room,so just poured several containers of the juice in a gallon jug. Anyway,taste more plum to me. I made up a gallon of the juice with 2 1/2 pounds sugar,a cinammon stick,2 cloves,a pinch of all spice,pinch of nutmeg, nutrient,enegizer,and pectic enzyme. The yeast is Red Star Cote Des Blanc. Not sure what I'll end up with. One question I do have is can I add the unsweetened juice to top the jug off after the fermentation settles down? I left the level a little low expection a wild fermentation start.
 
Cotes des Blancs has not been a very vigorous fementer in the couple of batches I have used it on. It works well, just not so fast, and so you may not have a problem.

You can top up with more juice, and depending on where the alcohol level is, it may or may not get fermented.

Have you measured your starting gravity?
