Hi, just looking for some advice/discussion. I had quite a bit of crystallised honey from hives so decided to make some mead, so a complete newbee to mead making ie first batch.
I took advice from a local brew shop and he advised I didn't need to add nutrients but the mead is fermenting very slowly, now he is saying maybe he should have advised me to add nutrients but it is too late now as it is 5 weeks into ferment. He also told me to have a starting SG of around 1.01. From my initial research most recipes call for around 2.5-3kg honey to 10 litres. I couldn't get anywhere near that SG with that amount of honey so added more to the second batch to try and bring it up. The guy at the brew shop has now said the reason I needed to add more honey is that I added the the honey to 10 litres of water, therefore the volume was greater than 10 litres once the honey was added. He said I should have put the honey in first then bring it up to 10 litres with water??
Anyway, I made up two recipes. First was 3kg honey added to 10 litres water, handfull of raisins and Lalvin EC-118 yeast, starting SG 1.06, second recipe was 4.5kg honey added to 10 litres water, handfull of raisins, a punnet of blueberries and Lalvin EC-118 yeast, starting SG 1.092. Temperature has always been maintained close to 20degC (68degF). Ferment bubbles throughout on each batch has been pretty constant at every approx 20 seconds. It is now 5 weeks and still fermenting, they aren't stalled, still bubble at 20 secs after a shake up. At 4 weeks I took an SG, the first was at 1.03 and second was at 1.06, so still a way to go.
Is there any way to safely speed it up or do I just have to wait it out?

I am no expert, and only dabble with the Alchemical Arts, but from what I have seen and read and heard. Time is your best friend and worst enemy. When I make a batch, its 3 months minimum before bottling and drinking. But that's just me. Some people still call my mead "green" and say it needs to age for 3 more months. I know some people wait a year before drinking it but bottle after only a month of fermentation. I have a friend that makes a "quick" mead that's ready in a month. I don't like it but some people do.

My first batch was 3 lbs honey to 1 gal water (1.3kg to 3.7 liters). My SG was at 1.09 and I added the full gallon not "up to a gallon" and i didn't add any nutrients, but it turned out fine. I have seen people do the "bring it up to" and it turns out fine. I know people that do a staggering nutrients thing so that like every 3 days they add stuff for the first 2 weeks.

A few batches later I totally messed up and misread my (new) tools so I ended up with 6 1/2 lbs honey to 1 gallon of water (2.95kg to 3.7L) I ended up doubling my yeast to start it (Dont think I needed to us 2 x 5g but I paniced) and I did add nutrients and energizer to it every few days (because I was afraid it would stall or die). Dont ask me how but It somehow still worked out and I ended up with a very sweet mead (FG was 1.06). I let that one sit for like 4 months.

Its been 5 weeks so how does it smell? taste? just because its still bubbling doesn't mean it needs to keep going. Maybe you need to kill it "early" because its perfect? maybe its already done and now its turning everything into vinegar? Don't use the SG to determine if its done. It may never get to 1.0 or .99, kinda like my messed up one that will never be lower then 1.06.

The thing I have noticed the most is that non of it really matters. Everyone has there own way of doing it and no one is wrong (generally speaking). And the best way to learn is to experiment. Smell, taste, feel, and play with it. Also, be patient. It takes time. Figure out what works best for you, how long you are willing to wait, and just have fun with it.
