After brewing my blonde ale this weekend, I will be brewing a wheat braggot. I'll be using 6-7 pounds of wheat malt, a touch of Vienna and biscuit malt for flavor, 5 pounds of wildflower honey, and some nice German noble hops for some balance.

And when I bottle, I'll add a little peach extract to the last gallon. ;D

Has anyone else made an all grain honey wheat beer lately?

I see you were doing your Wheat Braggot back in July. How'd it turn out? I'm curious because I'm thinking about trying a Wheat Braggot myself. I was considering doing 1/3 each of Wheat Malt, Barley Malt, and Honey, plus some hops in the boil. BTW, I boil my must when making mead, scraping off foam as it rises, and I don't use sulfites. I just thought I'd mention that, since some mead makers are opposed to boiling.

Please post your recipe if you're happy with the final product, and/or any ideas of what you might do different.
