I would like to invite you all to try my favorite beer creation (I've been making beer a few years longer than mead), Witty Twister. It has won a few ribbons at homebrew competitions. It is a modification of Tamalpais Wit that I found at stoutbillys.com or somewhere on the internet. The modifications are inspired by Randy Mosher (author of radical brewing).
4-1/2 pounds light dry wheat malt extract
2 pounds orange blossom honey
1 ounce Hallertauer pellet hops
1 ounce Hallertauer whole hops
1 ounces FRESHLY crushed coriander (Indian coriander)
1.5 tablespoons high quality orange marmalade
Wit yeast (Wyeat or White labs are both fine)
Bring 5 gallons of water to a boil, then add first three ingredients. Boil 45 minutes, then add 1/2 oz. coriander. Boil 10 minutes, then add remaining coriander and orange marmalade. Boil 5 minutes, and add the finishing hops (whole hops) for a final 2 minutes. Chill immediately to 75 F, areate into 5 gallon carboy, and add yeast. Ferment as usual. Rack to secondary if you feel like it. Prime with 3/4 cup corn sugar and bottle.
