I made the med sweet mead from K. Schramm's book. the first recipe for beginners. I racked numerous times to the point that it was perfectly clear. At this point i added a few pounds of honey to sweeten by racking out some of the mead, adding the honey by slowly stirring it, than siphoning it back into the carboy.
That was about 3 weeks ago and i have no signs of clearing yet. I added sparkolloid last night to it. Any ideas if I screwed up anything during the backsweetening and also how long should i let this sit? Hopefully it will just work itself out over time. I'm just curious.
