And the sulphites will kill anything exciting.
I've had three fruit fly infestations and the first one turned out to be one of the best ones I'd made up to that point. I ran it through a wine filter before bottling, just like I will do with the other two batches that got fruit flied last year (I strained them as soon as I found out where the little @#$ers were coming from)...
If you generally practise good sanitation, then if something happens, it's far less likely to be horrible than if there are already loads of other nasties in there just waiting...
